What I'm Excited About!

I always seem to be excited about something. Always.

To some people, I'm sure this can be very annoying, but I can't help it. :)

So, here's what I am excited about:

1. It's the weekend!

2. I coach middle school cheerleading, and today is the district tournament championship for basketball. Our girls and boys basketball teams are both playing for first! This also means that bball season is almost over. Hallelujah!

3. I've decided to tag along on the spring 8th grade trip to D.C. and Gettysburg! I am so pumped about Gettysburg because I love history.

4. I have THE cutest interactive bulletin board idea in my head - ever! I just have to figure out all the details first! But, it's gonna be kewl, as the kids say. lol

Spring Cleaning!




Okay, not really since it's only January. But, I suppose these temperatures above 60 degrees really put me in the mood to clean and reorganize. So, I have totally rearranged my little classroom, and I am thrilled with all the decluttering and purging that I did in the process. It wasn't a matter of: "Oh gosh, do I keep this or not?"..... It was more like: "Even if I might use this, I don't care. It's wasting space!" It felt great.

Why yes, I am a SteelHead.


  

Last night, we saw the SteelDrivers in concert at the Square Room! Anndd, we were on the front row.

This was my third time seeing them, and it was just as awesome as ever! Although they didn't sing my favorite song (Unbroken Ground), I was totally satisfied with all the new songs they performed, and I cannot wait until their new album comes out! If you like Americana/Bluegrass, you would love them! Honestly, if you love music, period, you would like something about this group.They refer to their sound as "uneasy listening" because their lyrics are sometimes so deep and are often laced with historical content, such as the Civil War. They are so talented!

Yet Another Recipe!

What? I can't help it; I love food!

Yesterday,  I made one of my favorite dishes ever - chicken Alfredo! Do you watch Semi-Homemade with Sandra Lee? Well, I don't. But, this recipe seems like something she would make because it is, in fact, semi-homemade.  Beware: my recipes are highly disorganized and scatter-brained...and so am I, unfortunately.  

What you need to succeed:
1 jar of the Bertolli's Alfredo Sauce (I use the classic, but there are other varieties)
1/2  can of spinach
Parmesan Cheese (grated)
About 4 chicken breasts
Penne Pasta (I love how it holds all the saucy goodness lol)


Now, I have to tweak the sauce by adding extra ingredients (thus, the semi-homemade part). I empty the whole jar into a saucepan to warm, then I refill the jar with milk  (shake it around) and add it to the saucepan as well. Sometimes I even pour in a little half-and-half.  Next, I add salt and pepper, lots of Parmesan cheese, and about half a can of spinach. Let it all get nice and hot.

Dice up the chicken and bake it while the noodles boil and the sauce heats.

Add it all together in a nice little baking dish and bake it until it's bubbly.
Add more Parmesan before serving. I always make salad and garlic bread, too. Just make it your own... but don't leave out the parm and the spinach because it's the best part. lol


Ahh, the semi-homemade ingredient! Yummo.

Not what I expected.

Today was just not what I expected. Well, I don't exactly know what I was expecting, but it wasn't what today was, that's for sure! It was a rainy, cold, and miserable day. It was just one of those days where everything goes wrong, and I found myself praying by lunch time. 

Since Sunday, I haven't found the time (or even the energy) to pick up my laptop and check my facebook, not to mention write a blog. I really wanted to be on top of this blogging thing because, really, who wants to read a blog that's rarely updated? Even with that mindset, I am still struggling to get on here, lol.

On a more positive note....
It's days like today that really make me thankful for my faith. And, if you read my blog for long, you'll realize that I am an optimistic person. I really do try to find a blessing in bitter situations. Yes, things could be much worse in my life; I'm healthy and so is my family. I have a husband who loves me and a very fulfilling (yet stressful) job. I could lose all of those things in the blink of an eye. I know that. How difficult would it be to see the bright side then? Unbelievably difficult, I'm sure. It may sound simple and stupid to some, but I know that as long as I have my faith in Christ, everything else is worthless. Basically, I need nothing but him because without him I am nothing.

So truly thankful for what I've been blessed with.

It's Still Christmas to me!

Tonight Aaron and I went to see all the spectacular lights at Shadrack's Christmas Wonderland! Apparently, I am still clinging to Christmas, and I'm having a hard time letting go because it's my favorite time of year EVER! This is my second year seeing the lights, and I just love them.

The show is kind of like a drive-in movie because you hop in the car, pay the guy in the booth, and drive by all the light displays with your radio cranked up to their station. The best part: the lights are synchronized to the songs on the radio station!

Oh, I knew that!!

As a teacher, my students sometimes come up with the craziest questions. Not all of their questions are off the wall; some are actually good! Notice I said some. lol

I teach reading so many of our passages and materials deal with the most random topics! Like today, we read an article about Hokusai the Japanese artist! Imagine the questions (and stares) I received when they found out he changed his name over thirty times and painted a door using a rooster?

But anyways, sometimes there are those questions that make me *face palm* and say, "I totally used to know that! Why can't I remember this?" So, if I can't answer a question, we always google it as a class. Someone say teachable moment!?! :)

Anyway, while browsing Amazon for free Kindle ebooks I find this treasure....

This book has everything you learned in school but forgot. Really, everything  that is remotely important to all subject areas can be found here! It's well organized, consise, but it's also thorough too - especially the language and history sections! I perused it and instantly felt smart (and OLD because I had forgotten most of this stuff!). lol

Remember: You're never too old (or too busy) to keep learning!   

Bring on the wacky questions, kids! I am prepared!

Love, Love, Love

       Just want to express my affection for this hair product. I mentioned in my first post about my obsessions with weather, hair/makeup, and history. Well, I knew it wouldn't be very long before I posted about a hair product. So, while getting ready this morning, I realized just how much I love this stuff.

If you want volumnuous hair, or if you want to skip a wash, use this. I always shampoo everyday, but sometimes if I want to wear my hair up and need extra oomph this works wonders. It is a mattifier so it absorbs oil, but a lot of people freak out over the way it makes their hair feel.

The motto I live by: The Higher the Hair the Closer to Heaven...and if a head full of product is the price to pay for pretty hair, then so be it. :)

Easiest Peanut Butter Cookies... Ever! :)

Since I got married, I have come to the conclusion that I'm not the best "cook" in the world. However, I sure do like to bake! :) I found a peanut butter cookie recipe that rocks. It is SO easy-peezy-lemon-squeezy!
1 cup sugar
1 cup peanut butter
1 egg
1 teaspoon of vanilla extract

And that's it! Mix it all together! Roll them into 1 inch balls. Flatten them with a fork. Bake them @ 350. I bake them until they are just golden because I like them chewy. Aaron likes them crunchy. It's a constant battle.

Hershey's kisses could be added to make a classic peanut butter blossom cookie. But, my favorite thing to do is....

ADD CHICK-O-STICKS!!
I crush these up and mix them into the batter. (They are available in sugar-free, too.) 
Oh yeah, there's no flour in the batter so it's gluten free, obviously.
Heaven!

First Snow!!

For anyone who might stumble across this blog, I feel that I must share my joy about the FIRST SNOW DAY of the school year! Teachers love snow more than kids, and that is a fact.

Although I am a teacher, I must confess my true reasoning behind my snow day excitement. Weather, mostly snow and storms, intrigues me to no end, and anyone who knows me understands that my life-long goal was to be a meteorologist. Geeky, I know. (I also love all things historic and cosmetic, but that's another post in itself.)


Annnnd, that's Aaron, my husband. He just rolls his eyes as I tip-toe to the window to watch it snow, and sometimes in public he pretends he doesn't know me - like last night at Outback when I performed a Snow Dance at the table. Obviously it worked because we were nearly stranded on I-75 as we came home! :) Brrrr!

*I must add that we received yet another snow day for tomorrow. This means we've been off for over three weeks. I think I've forgotten how to teach! lol*
